Rhubarb Dream Bars




Spring-time is perfect for the sweet and tart tang of Rhubarb Desserts. Here is an easy recipe that is sure to be a crowd-pleaser!


For the Crust

Blend together:

2 cups flour

1 cup butter (softened)

1/4 powdered sugar

Press into a 9 X 13 baking pan and bake at 350 degrees for 15 minutes.


For the Topping

Blend together:

4 eggs

2 cups granulated sugar

1/4 teaspoon salt

1/2 cup flour

Stir in 4 cups of diced rhubarb


When the crust is done, carefully take the hot pan out of the oven and pour the topping over the hot crust.   Continue baking for 40-45 minutes.  Remove from oven, cool and serve (yes, of course with vanilla ice cream!)

*This recipe is also great with add-ins, like strawberries or other sweet berries!  Just make sure that your total fruit equals 4 cups.  

Rhubarb is one of the easiest perennials to grow!   There is a reason nearly every western homestead is surrounded with this delicious "fruit".
